There are an infinite number of variations to this basic recipe. Use different combinations of your favorite ingredients. Some of my favorite flavors are:

  • If you are a fan of spicy eggs, replace the bell peppers with sliced jalapeno peppers or add a few drops of hot sauce.

These cream cheese egg bites are easily stored in the refrigerator or freezer.

Refrigerator

If you're going to eat the homemade egg bites within a few days then refrigerating them is the way to go.

  1. Let the baked egg bites cool completely.
  2. Transfer them to a food safe, airtight container or add to a resealable plastic bag.
  3. Place in the coldest part of the refrigerator and eat them within 5 days.

Freezer

I like to double or triple this recipe so I have a month's worth of easy breakfasts.

Flash freezing is the way to go because it keeps the eggs from sticking together so you can just package them in one container and grab individual portions as needed.

  1. Let egg bites cool to room temperature.
  2. Put on a baking sheet in one layer not touching each other. You may want to line the baking pan with parchment for easy removal.
  3. Freeze for about an hour.
  4. Remove from the baking sheet and store in an airtight container or resealable freezer bags.
  5. Store for up to 3 months.

To reheat

  1. If frozen it's best to let them thaw overnight in the refrigerator.
  2. Wrap an egg bite in a damp paper towel.
  3. Microwave for 20 seconds, check to see if they are warm, then heat in 10 second intervals until hot. Check often because they turn to rubber when overcooked.

  • ¼ cup bell peppers, diced small
  • bacon grease, for oiling the muffin tins
  • 9 eggs
  • 2 ounces cream cheese
  • 4 slices bacon, cooked and crumbled
  • ½ cup Cheddar, grated from a block
  • cup baby spinach, chopped
  • ½ teaspoon salt

Instructions

  • Preheat the oven to 350° F.

  • Spray a 12 cup muffin tin with nonstick cooking spray and lightly brush with bacon grease or oil. Set aside.

  • Saute diced peppers in a little bacon grease until soft. Remove from heat and pat with paper towel to remove extra grease.

  • Add bacon, peppers, spinach, and Cheddar to each muffin cup.

  • Add the eggs, cream cheese, and salt to a blender.

  • Blend until well mixed.

  • Pour the egg mixture over the bacon mixture in the muffin cups.

  • Place the muffin tin in a larger pan.

  • Add boiling water until it reaches about halfway up the muffin tin.

  • Bake for 15 minutes, or until set.

  • Remove from oven and let stand for 10 minutes.

  • Carefully remove the egg bites from the muffin cups.

How to Reheat Egg Bites

  • For best results thaw overnight in the fridge if frozen.

  • Wrap an egg bite in a damp paper towel and microwave for 20 seconds. If it's not warmed through continue to heat in 10 second intervals.
